Method
  • Heat oil and spices over a medium heat for 3 minutes until fragrant. Allow to cool, then stir half the mixture into sweet chilli sauce.
  • Toss chicken and garlic together with remaining spice mixture. Season.
  • Sauté chicken and nuts over a high heat until cooked through.
  • Soak rice paper sheets one at a time in lukewarm water for 20 seconds, until softened.
  • Divide chicken, vegetables and mint into 8 portions and lay in the centre of each rice paper sheet. Roll tightly, tucking in sides.
  • Serve with dipping sauce.
