Method
  • Preheat oven to 180°C.
  • Wrap each asparagus spear in parma ham and place on a baking sheet.
  • Arrange tomatoes around spears and drizzle with olive oil.
  • Season tomatoes with salt and everything else with pepper.
  • Roast for 15 minutes, or until crispy.
  • Toss spinach and rocket on a platter with balsamic, olive oil and seasoning.
  • Dot egg halves over asparagus and tomatoes and serve.
