Method
  • Heat a glug of oil in a large pan or wok
  • Stir-fry onion and beans until just cooked but still crunchy
  • Add cabbage and chard and allow to wilt
  • Squeeze over lemon juice  and toss through peanuts
  • Season and serve


More good ideas

  • Add a handful of soaked raisins or sultanas to vegetables
  • Replace peanuts with toasted cashew nuts or sunflower seeds
