Method
  • Olive oil, for drizzling
  • Preheat oven to 220˚C.
  • Using the back of a spoon, gently crush each potato.
  • Place potatoes onto a baking tray. Drizzle generously with olive oil and season well.
  • Bake for 20 - 25 minutes, or until crisp and golden.
  • Add garlic, olives and tomatoes and roast for another 10 minutes. Add parsley and season.
  • Serve immediately.
