Cumin-scented minute steak with chickpea ratatouille

This chickpea ratatouille is delicious and full of goodness. Trim off all the fat from the steaks and remember it's important not to overcook minute steaks or they'll become tough and dry.

Method
  • Dust steaks with spices and season with salt and pepper
  • Heat a little oil in a pan and fry onion and garlic to soften
  • Add remaining vegetables and stir-fry until cooked
  • Pour in wine or stock and cook for 5 minutes. Stir in chickpeas and mint to warm through.
  • Heat a griddle pan and chargrill minute steaks for 30 to 40 seconds per side or until done to your liking
  • Serve with vegetables


Take two

  • Cut leftover cooked steak into strips and toss with leftover vegetable mixture, salad leaves, cherry tomatoes and feta (optional). Note: add salad leaves just before serving.
