Method

Cupcakes:

  • Preheat oven to 180°C.
  • Cream butter, sugar and vanilla together.
  • Add eggs, one at a time, beating well after each addition.
  • Fold flour and milk into butter mixture and mix until smooth.
  • Fill each cupcake case with a rounded tablespoonful batter and bake for about 18-20 minutes or until golden.
  • Remove from oven and place on a wire rack to cool.


Butter icing:

  • Cream butter until smooth.
  • Add vanilla and beat inicing sugar.
  • Add water and beat for about 3-4 minutes or until icing is light and fluffy.
  • Add a little more water or sugar if necessary.


To ice cupcakes:

Step 1:

  • Peel off cupcake paper. Completely cover cupcake with icing.


Step 2:

  • Roll cupcake in coconut.


Step 3:

  • Use an almond for a beak. Stud chick’s head with 3 jellybeans for a comb and use a couple for feet.
  • Use icing sugar or sweets to make eyes.
