Method
  • Toss calamari in spices, until well coated. Season.
  • Heat a glug of oil in a pan and fry calamari in batches over a high heat for about 1 - 2 minutes, or until just cooked.
  • Set aside and keep warm.
  • Mix rice with coconut, chilli, herbs and lime juice. Season.
  • Serve with calamari, lime wedges and diced tomato.
