Method
  • Heat oil in a large saucepan and fry onion until soft.
  • Add garlic and curry powder and fry until fragrant.
  • Add carrots, tomatoes, bay leaves, thyme, lentils and water. 
  • Reduce heat and simmer for 45 minutes or until lentils are cooked through.
  • Stir through beans and simmer for a few minutes to heat through. Serve immediately.

 

Good idea

  • Garnish soup with fresh coriander leaves and serve with crusty low-GI brown bread.
