Curried lentils with soft-boiled eggs

This dish is a great boost to your daily intake of vegetables. Lentils have a fabulous fibre content too. The eggs provide a good source of protein, zinc and iron.

Method
  • Preheat oven to 200°C
  • Heat a glug of oil in a saucepan
  • Fry onion until soft. Add garlic and curry powder and fry for another minute.
  • Add tomatoes, chutney, water and vegetables. Simmer for 10 - 15 minutes. Add lentils and allow to reheat. Season.
  • Spoon into an ovenproof dish/es. Make a hollow/s in the centre and crack an egg or two into each.
  • Cover with foil and bake for 10-15 minutes, or until eggs are done to your liking
  • Serve lentils topped with coriander


More good ideas

  • Use cooked, dried lentils in place of canned lentils
  • Serve lentils topped with soft boiled or poached eggs instead
