Method
  • Fry onion in oil and butter until beginning to brown, add remaining paste ingredients and fry for a few more minutes
  • Cook potatoes, cauliflower and peas until just tender. Toss in spice paste and coriander and season.
  • Spoon into peppers and bake for 30 minutes
  • Mix together ingredients for raita and season
  • Serve peppers topped with raita and coriander
