Method
  • Stir first three ingredients together to dissolve sugar
  • Add cucumber and mango
  • Toss and set aside
  • Combine curry rub, lemon juice and olive oil and rub onto fish
  • Heat a non-stick pan and cook fish over a medium heat until cooked through, about 4-5 minutes per side.
  • Serve with cucumber and mango salad and basmati rice

  • Stir curry rub, lemon juice and chopped coriander through yoghurt and serve drizzled over grilled chicken.
