Dark chocolate fondants with truffle sauce

It's easy to make this trendy dessert at home. Go on, impress your dinner-party guests!

Method
  • Melt 1/5 cup (50g) butter and use to grease 6 ramekins.
  • Refrigerate to set. 
  • Brush with more melted butter and dust with cocoa.
  • Place a bowl over a saucepan of barely simmering water and add chocolate and remaining butter. 
  • Stir until smooth and cool for 10 minutes.
  • Whisk eggs and sugar together until thick and pale.
  • Sift in flour and stir to combine.
  • Fold melted chocolate through egg mixture a third at a time until it resembles a loose cake batter.
  • Divide batter between ramekins. 
  • Chill for at least 20 minutes or overnight.
  • Heat oven to 200°C. 
  • Place fondants on a baking tray and cook for 10-12 minutes or until tops have formed a crust and sides are coming away from edges.
  • Remove fondants from oven and rest for 1 minute before turning out of ramekins.
  • Serve with a spoonful of truffle sauce.
