These meringues, with their soft marshmallow centre, are absolute heaven!

Method
  • Preheat oven to 160°C.
  • Line 2 large baking trays with foil, and grease well.
  • Beat egg whites, salt and lemon juice until stiff.
  • Add sugar 1 Tbsp (15ml) at a time, beating well after each addition.
  • Once all the sugar has been added and the mixture is becoming thick and fluffy, fold through cornflour.
  • Pour melted chocolate over meringue mixture.
  • Drag a knife through mixture 4 times to marble meringue.
  • Scoop spoonfuls of meringue mixture onto lined trays.
  • Bake for 15 minutes at 160°C, reduce heat to 100°C and continue to bake for 1½ hours, or until crisp on the outside and soft on the inside.
