Devilled silvers with cucumber salad

Silvers are a readily available, sustainable white fish. Give them a whirl as more familiar species such as yellowtail and kabeljou are becoming scarcer.

Method

Salad:

  • Heat sugar, vinegar and mustard seeds in a small saucepan until sugar has dissolved.
  • Pour mixture over cucumber and onion. Allow to marinate for 30 minutes. Season.
  • Preheat grill. Cut 6 shallow slits into both sides of each fish.


Paste:

  • Mix paste ingredients together and season. Rub paste over fish and into slits.
  • Cook fish close to the grill for 4 – 5 minutes per side, or until just cooked and slightly charred.
  • Serve with salad and crusty bread.
