Good for using up leftover rice ‐ just make sure it's cold when you start or it'll go soggy.

Method
  • Heat a little oil and sesame oil in a pan or wok and stir-fry garlic and ginger.
  • Add spring onions, baby marrows and shrimps and stir-fry for 2 minutes.
  • Toss in rice and soy sauce and stir-fry to reheat rice
  • Move rice to the side of pan to create a space for eggs
  • Add eggs and scramble until cooked, toss with rice and serve immediately.
