Method
  • Heat a little olive oil and the sesame oil in a non-stick pan or wok. Add onion and red pepper and stir-fry for 3-4 minutes until soft. Add sugarsnap peas, garlic and ginger and fry for another minute.
  • Toss in sweetcorn and rice, and stir-fry until heated through
  • Add soy sauce and eggs and stir-fry for a further 2 minutes until egg is cooked
  • Serve sprinkled with toasted sesame seeds
