Method
  • Preheat oven to 180°C
  • Cut each pastry sheet into 4, score a 2.5cm border around each and place on a greased baking tray
  • Pulse ham, spring onions, mustard and mascarpone in a blender until roughly chopped
  • Spread a dollop of mixture within the borders of each pastry square and top with asparagus
  • Brush borders with egg
  • Drizzle tarts with olive oil and season
  • Bake for 20-25 minutes. Top with parmesan and serve with green salad.


Cook's tips

  • Use PnP’s smoked salmon in place of ham
  • Make tarts ahead of time and freeze until needed
