Method

To make dough

  • Mix all dry ingredients together in a large bowl and make a well in the centre.
  • Pour oil and half the water into the well and mix, pulling flour from the sides into the middle. Add remaining water until it forms a sticky dough.
  • Turn dough onto a lightly floured surface and knead well for 10 minutes or until smooth and elastic.
  • Place dough in a lightly greased bowl and cover
  • Allow to rise in a warm place for 45 minutes or until doubled in size.
  • Makes enough dough for 4 large pizzas - divide dough in two and freeze one half for next time.

 

To make pizza

  • Place oven rack on highest shelf and preheat oven to maximum temperature.
  • Soak figs in wine for 30 minutes, then drain
  • Roll dough (one half of above quantity) into 2 thin, foot-long bases and place on a baking tray. Drizzle with olive oil.
  • Sprinkle over mozzarella, feta, rosemary and bacon and top with drained figs.
  • Season well and drizzle with olive oil
  • Bake for 7-10 minutes or until crisp and golden
  • Drizzle with honey and serve

 

More good ideas

  • Use fresh figs if they are available
  • Replace bacon with Parma ham
  • Use apple juice in place of wine
