Baked fish in a parcel. Very French and deliciously moist.

Method
  • Preheat oven to 180°C.
  • Mix oil, lemon zest, garlic and herbs, drizzle over fish and marinate in fridge for 2 hours.
  • Toss cherry tomato ingredients together, season and roast for 30 minutes.
  • Place 4 x 30 cm square sheets of baking paper on baking trays and divide roasted tomatoes between squares.
  • Place fish over tomatoes and top each fish portion with a basil leaf.
  • Fold baking paper squares into envelopes, fold edges to seal and bake for 15-20 minutes.
  • Heat napoletana sauce and whisk in butter a little at a time.
  • Stir in olives, capers and lemon juice, then drizzle with olive oil.
  • Serve fish and tomatoes in parcels with sauce on the side.
