An Italian coastal classic. Use any fresh or frozen fish to make these fishballs.

Method
  • Mix all fishball ingredients together. (Add more wine if mixture is too dry, or more breadcrumbs if too wet.) Season.
  • Shape rounded tablespoonfuls of mixture into balls and compress well.
  • Dust with flour.
  • Heat a generous glug of oil in a pan and fry the fish balls until golden.
  • Drain excess oil from pan and add sauce. Cover and simmer for 5 – 10 minutes.
  • Serve tossed through hot pasta.
