Fish salad with oranges, lemons and grapefruit

A delicious fish salad starter for summer nights.

Method
  • Prepare the oranges and grapefruit and place in a medium sized bowl.
  • Grate half the lemon rind into a small bowl and combine the lemon juice with the olive oil, chili flakes and parsley. Season well with salt and freshly milled black pepper. Whisk well. 
  • Brush onto the fish portions and cook them for about 10 minutes, either in a non-stick pan or under a hot grill. Set aside and allow to cool. 
  • Dress the salad with some of the vinaigrette and place them on a platter.  Break the fish up into big chunks and add to the fruit, season with salt and black pepper. Pour over some dressing and mix carefully. 
  • Tumble the salad out onto the leaves and pour over any remaining dressing.
  • Serve with some crusty bread to six people as a starter course and four as a main course.
