Method
  • Place rice, salt, stock, coconut milk, lime juice and zest into a large heavy-based saucepan and bring to the boil.
  • Reduce heat, cover and cook for 10 minutes or until rice is tender. Remove from heat, drain if necessary, cover and rest for 5 -10 minutes. Stir through coconut and coriander.
  • Fluff with a fork and serve. *Tiny shavings of lime peel used to add flavour.
