Method
  • Preheat oven to 200°C.
  • Toss curry ingredients together in a roasting pan.
  • Cover with foil and bake for 20 minutes, then remove foil and cook for a further 15 minutes.
  • Cook rice according to packet instructions, adding turmeric to water before cooking.
  • Mix frozen vegetables through cooked rice, cover with a lid and place over a very low heat to steam through and heat vegetables.
  • Place chicken on a bed of rice and serve garnished with coriander.

 

Good idea

  • Use firm white sustainable fish fillets instead of chicken pieces.
