A healthy family favourite. Mangos are rich in both vitamin A and C - great for boosting the immune system. Use low-fat evaporated milk to lower the fat content.

Method
  • Dissolve jelly powder in boiling water
  • Add gelatine to hot jelly and stir until completely dissolved. Stir through juice and allow to cool.
  • Beat evaporated milk with an electric hand beater until stiff peaks form.
  • Add cooled jelly mixture, beating continuously
  • Fold in mango purée. Pour into 6-8 individual (200ml) or 2 large (1L) moulds.
  • Return to fridge to set, about 2-3 hours
