Method
  • Cook pasta according to packet instructions. Drain and set aside.
  • Heat a large glug of oil and fry spring onions, garlic and chilli for a minute. Add wine and bring to the boil.
  • Toss in tomatoes and mussels, cover and cook for 5 - 10 minutes or until mussels have opened.
  • Toss through pasta and basil.
  • Season to taste and serve immediately.
