Method

  • Pour all ingredients, except lime juice, into a saucepan
  • Bring to the boil, stirring frequently, until sugar is dissolved
  • Reduce heat and simmer for about 5 minutes or until a light syrup forms
  • Remove from heat and add strained lime juice
  • Cool, then refrigerate
  • Serve cold, drizzled over sliced, seasonal fruit. Any leftover syrup will keep for weeks in the fridge.
