Method
  • Preheat oven to 180°C
  • Mix batter ingredients and fruit together well and pour into a greased ovenproof dish.
  • Bake for 45 minutes or until a skewer comes out clean
  • Topping
  • Mix topping ingredients together and bring to the boil
  • Set aside and keep hot
  • Pierce pudding with a skewer
  • Pour topping over pudding once out of the oven and allow liquid to seep in.
  • Serve with custard, cream or ice cream

 

More good ideas

  • Stir any leftovers with a couple of chopped nuts and a dash of brandy through vanilla ice cream. Freeze and serve another day.
  • Any chopped, canned fruit can be used
