Method
  • Make an indirect fire in a Weber by placing the coals on each side and placing a tray in the centre of the Weber.

For the rub:

  • In a pestle and mortar, grind the rosemary, thyme, garlic, salt, pepper and olive oil.
  • Coat the prime rib with the rub and set aside. Allow to marinade for 20 minutes.
  • Cut 4 quarters of aluminium foil and place the quartered butternut on the centre.
  • Crumble the feta cheese over the butternut, drizzle with olive oil and season with salt and pepper.
  • Wrap the butternut tightly in the foil. 
  • Place the prime rib in the centre of the Weber and the butternut around the sides.
  • Close the lid of the Weber. If the Weber has a temperature gauge, try keep the temperature around 180 degrees using the vents to control this.
  • Roast for 30-35 minutes depending on the size of the roast.
  • Remove the roast and rest for 10 minutes.
  • Unwrap the tinfoil from the butternut, drizzle with a little balsamic vinegar and a last season with salt and pepper.
  • Cut the meat off the prime rib, slice thinly and serve with the roasted butternut.
