A delicious low-carb and healthy supper. Cut the skin off the chicken before cooking it to lower the fat content.

Method
  • Preheat oven to 180°C
  • Toss garlic, lemon juice and peel, oregano and chicken pieces together
  • Season and place in a roasting pan
  • Roast for 30-40 minutes or until golden and cooked through
  • Squeeze roasted garlic from skins and set aside
  • Steam cauliflower in a little water until tender
  • Drain and purée with roasted garlic and butter
  • Season purée and serve with chicken
