Method

 

  • Preheat oven to 180°C. Grease a 1.5 litre ovenproof dish with a little butter.
  • Combine ¼ cup (60ml) brown sugar and all of the flour in a bowl.
  • Add butter, ginger, egg, milk and half the honey. Stir to combine and spoon into dish.
  • Combine remaining sugar and cornflour and sprinkle over pudding mixture.
  • Mix remaining honey with hot water. Stir in orange juice.
  • Pour over pudding and bake for about 40 - 45 minutes, or until a skewer inserted into the centre comes out clean.
  • Serve warm with ice cream, custrad or cream.
