Method
  • Heat oil in a large saucepan and sauté onion, chilli, cumin, coriander, ginger and turmeric.
  • Add sweet potato, carrots, parsnips and potatoes and fry for 5 minutes.
  • Add split peas and stock.
  • Bring to the boil, reduce heat and simmer for 30-40 minutes or until cooked through.
  • Blend three quarters of mixture until smooth, stir in remaining mixture and season.
  • Dollop with yoghurt, scatter with chopped coriander and serve with naan breads or rotis.

  • Use a pack of PnP roasting vegetables.
  • Replace ground cumin and coriander with a generous spoonful of curry powder.
  • Add bacon, gammon, chopped chorizo, or any other spicy sausage for extra flavour.
