Golden potato bake

Use round floury potatoes, parboiled to reduce oven time. Ina Paarman's recipe is a wonderful way to use up any leftover bits of cheese and it tastes even better the next day.

Method
  • Preheat oven to 180°C
  • Butter a medium-sized ovenproof dish, no smaller than 22x14cm (and 4cm deep).
  • Parboil potatoes in their skins for 12 minutes
  • Slice potatoes into 3mm-thick rounds and layer into the dish, seasoning lightly as you go.
  • Beat egg, cream, water and stock powder until well blended
  • Pour mixture gently into the dish from the side
  • Mix breadcrumbs and cheese and sprinkle over the potatoes
  • Bake for 35-40 minutes until golden brown and cooked through
