Method
  • Preheat oven to 180°C
  • Toss all ingredients, except parsley, together into an ovenproof dish and season
  • Bake for about 20-25 minutes, or until tomatoes are slightly caramelised
  • Scatter with parsley and serve with a side salad, grilled fish or chicken, or a crisp ciabatta
  • Alternatively, fry bacon and onion together in a pan
  • Add remaining ingredients and simmer for 20-30 minutes on top of the stove
