This is a one-pot winner. It's also good made with fish fillets, but you will need to adjust the cooking time accordingly.

Method
  • Preheat oven to 200°C.
  • Halve chicken breasts and place in a roasting pan with baby potatoes.
  • Mix garlic paste, herbs, chicken stock, sugar, tomatoes and olives together and season.
  • Pour over chicken and bake for 25-35 minutes.
  • Serve with steamed green beans.


Good things to add:

  • Chunks of red and yellow peppers, canned chickpeas, butterbeans and cannellini beans.
