Method
  • Heat oil and fry spices and curry leaves for a few minutes.
  • Add onion and garlic and fry until soft. Add rice and toss to coat.
  • Add stock and water and bring to the boil.
  • Reduce heat, cover and simmer for 8 minutes.
  • Place vegetables on top of rice, cover and cook for another 8 minutes.
  • Fluff rice with a fork, season and stir through herbs and nuts.
