Lovely and succulent with a pretty 'something on the side'. Pork is a lean meat as long as you remove all visible fat.

Method
  • Soak sultanas with a dash of hot water to soften.
  • Mix apple juice, herbs, spices, lemon juice, peel, olive oil and sultanas together and pour over chops.
  • Marinate for 10-15 minutes.
  • Griddle or pan-fry pork over a medium heat for 5-6 minutes on each side, or until cooked through and golden.
  • Serve scattered with parsley.

MORE GOOD IDEAS

  • Use fish or chicken instead of pork.
  • Add a spoonful of harissa or chermoula paste for extra zing.
  • Top pork chops with pineapple slices and cook under the grill.
