Method
  • Mix olive oil, seasoning, herbs and spices together.
  • Toss brinjals in oil mixture and fry until cooked through and golden.
  • Brush sliced bread with garlic, drizzle with a little oil and griddle until toasted.
  • Pile brinjals onto bruschetta, scatter with parmesan and mint, and serve.


Good ideas

  • Add a pinch of  dried chilli flakes  to olive oil mixture.
  • Mix a little pesto and cream cheese together and spread onto baguette slices before topping  with brinjals.
