Method
  • Finely chop or pulse the salsa ingredients in a food processor
  • Adjust the seasoning and set the salsa to one side
  • Heat olive oil in a non-stick frying pan big enough to hold 4 portions of fish without squashing them together
  • Add the garlic and cook for about 30 seconds
  • Add fish pieces and cook for about 4-5 minutes per side, depending on thickness, or until cooked through
  • Season with salt and pepper and remove from heat
  • Serve with a large dollop of salsa verde and a fresh green salad on the side
