Grilled fruit kebabs with home-made ice cream and salted caramel sauce

Use whatever fruit are in season. Alternatively, lose the healthy part and just serve ice cream with caramel sauce.

Method

For the ice cream:

  • Dissolve sugar in milk over a medium heat. 
  • Add vanilla and stir to infuse.
  • Add egg yolks, whisking continuously, and cook over a medium heat until slightly thickened.
  • Remove from heat and cool.
  • Beat cream into soft peaks and fold into cooled ice cream mixture. 
  • Freeze for 6-8 hours or until solid.

 

For the sauce:

  • Heat castor sugar and butter over a medium heat until caramel coloured.
  • Add cream and vanilla and stir until sugar is dissolved.
  • Remove from heat and stir in Maldon sea salt.
  • A selection of seasonal fruit such as guavas, naartjies, or strawberries, cut into chunks
  • Thread fruit on small skewers and grill on braai until just charred.
  • Serve with scoops of vanilla ice cream and salted caramel sauce.
