Method
  • Mix butter ingredients, together, place onto a piece of clingfilm and roll into a log shape.
  • Refrigerate or freeze until firm enough to slice into discs.
  • Drizzle fi sh with olive oil and season.
  • Heat a non-stick pan and cook fish skin-side down for 3-4 minutes or until skin is golden and crispy. 
  • Turn fish and fry for another 2-3 minutes or until cooked through.
  • Melt 1 tsp (5ml) balsamic butter in a pan and fry carrots until tender.
  • Add beans and season.
  • Serve fish with vegetables and slices of balsamic butter.
