Method
  • Place dry ingredients in a bowl.
  • Add oil and enough warm water to form a soft dough.
  • Turn out onto a floured surface and knead until dough is smooth. Cover and set aside to rise.
  • Divide dough into 8 portions and roll out to a 5mm thickness.
  • Heat griddle pan and cook for 1-2 minutes on each side until puffed up and cooked through.
  • Combine salsa ingredients and serve over warm flatbreads.

*Cook's idea: top with chopped cherry tomatoes, feta and basil.*
