Grilled lemon chicken skewers with Moroccan cous cous salad

Method
  1. Prepare a direct fire to a moderate heat.
  2. In a bowl, combine juice and zest of 2 lemons, garlic, oregano and stir well. Add 1/2 cup olive oil and whisk to combine. Season with salt and pepper. Add chicken to mixture and allow to marinade for 30 minutes.
  3. Soak wooden skewer in water for 10 minutes to prevent them burning when skewers are place on the fire.
  4. Assemble skewers by threading a piece of chicken, followed by spring onion and lastly by a lemon slice.
  5. Place on the grill and cook for 10 – 15 minutes.
  6. To make cous cous salad, add cous cous to a heatproof bowl and pour over boiling water. Cover with plastic wrap and allow to sit for 10 minutes.
  7. Once the cous cous is ready, fluff it using a fork to separate grains and combine with tomato, red onion, parsley, dried apricots and raisins.
  8. Add the ground spices to a small saucepan and heat through for 2 – 3 min over a low heat until just smoking. Add remaining olive oil and lemon juice and cook for 1 min over a low heat. Season with salt and pepper. Dress cous cous well. Serve along side skewers.

Using herbs and spices is an excellent way to flavour your meals without adding excess salt.
