Method
  • Prepare a medium heat fire.
  • Drizzle a tablespoon of olive oil over the aubergines and baby marrows to coat. Season with salt and pepper.
  • Grill the vegetables until grid lines show and the vegetables are cooked. Set them aside.
  • Grill the halloumi cheese on the grid until soft and golden brown.
  • Assemble the grilled vegetables and halloumi onto a platter of baby spinach and top with the slices of tomatoes with basil leaves.
  • Season with salt and pepper and drizzle with olive oil and apple cider vinegar over the top and serve as a delicious, healthy side.

Dietitians note:

Because halloumi is quite a salty cheese, it is unlikely that you will need to add extra salt to this meal.  Taste the meal before adding extra salt for flavour.
