Herbed meatballs with pasta shells

This pasta dish is delicious both hot and cold, making it fabulous lunch box fare for all ages!

Method
  • Preheat oven to 180C
  • Cook pasta according to packet instructions and drain
  • Toss cooked pasta, tomatoes, onion and parsley together
  • Drizzle with olive oil and cider vinegar. Mix, season and set aside.
  • Mix meatball ingredients together in a large bowl and season well
  • Roll spoonfuls of the mixture into balls (makes about 28 meatballs)
  • Place meatballs onto a greased baking tray and bake for 20-25 minutes or until cooked though.
  • Serve pasta salad topped with meatballs

 

Cook's tips

  • Cut the fat by using chicken mince or pure ostrich mince
  • Boost the flavour by adding 2 tsp each ground cumin and coriander
  • Fry the meatballs in a little oil if you prefer
