Home-made ketchup with thick-cut chips

I got this idea from Jamie Oliver, and what a great idea it is!

Method
  • Place ketchup ingredients, except basil leaves and Worcestershire sauce, in a large saucepan and slowly bring to the boil.
  • Simmer covered for 30 minutes.
  • Stir through basil leaves and Worcestershire sauce and blend in portions until smooth.
  • Sieve twice for a super smooth consistency.
  • Pour hot sauce into sterilised jars and seal.
  • Heat 4-5cm vegetable oil in a saucepan and fry potato chips in batches until soft. Drain.
  • Just before serving, fry chips for a second time until crispy and golden.
  • Drain on kitchen paper and serve with salt, vinegar and ketchup.
