Home-made nacho chips with black-bean salsa

This tasty snack puts a healthy spin on the Mexican classic. Not only are black beans a good source of cholesterol-lowering fibre, they're low in fat and a great source of protein.

Method
  • Line 2 large baking trays with baking paper. Grease paper and dust with polenta.
  • Preheat oven to 180ºC.
  • Mix dry ingredients together in a bowl. Add water, oil and Worcestershire sauce and mix together to form a dough.
  • Knead on a floured surface until smooth. Divide into 2 balls.
  • Roll dough between 2 sheets of baking paper until 2mm thick.
  • Remove top sheet of paper, place baking tray over dough and flip.
  • Peel off remaining paper and cut into triangles.
  • Repeat with remaining dough.
  • Bake for 12 -15 minutes or until lightly browned. Allow to cool on baking tray then remove paper.
  • Toss salsa ingredients together and season.
  • Serve nacho chips with salsa and lime wedges.
