Method

Makes 1 large bun loaf

  • Combine dry ingredients in a bowl and mix well.
  • Beat water, milk, egg and butter together until combined. 
  • Add wet mixture to dry ingredients and stir to form a soft dough, adding more warm water if necessary.
  • Add fruit mix, cranberries and apricots, then turn dough out onto a lightly floured surface and knead until smooth.
  • Place into a lightly oiled bowl, cover with a kitchen towel and leave to rise until doubled in size.
  • Preheat oven to 180˚C.
  • Knock back dough and roll it into a large ball. Place onto a lined and greased baking tray and leave to double in size again.
  • Mix cross dough ingredients together until smooth and spreadable but not runny. 
  • Scoop mixture into a piping bag and pipe a cross-shape onto loaf. Bake for 35-45 minutes or until golden brown.
  • Boil glaze ingredients and paint over hot loaf.
