Method
  • Preheat oven to 180ºC.
  • Beat egg yolks, condensed milk, lemon juice and peel together. Divide between 4 x 1 cup ramekins.
  • Beat egg whites until stiff.
  • Add sugar to egg whites, a heaped tablespoonful at a time, beating continuously.
  • Add vanilla.
  • Top lemon mixture with meringue and bake for15 -20 minutes until golden.
  • Allow to cool slightly, or refrigerate before serving.

  • To make a key lime dessert, replace half the lemon juice with fresh lime juice.
  • Fold desiccated coconut through meringue.
