Method
  • Heat a glug of oil in a pan and fry garlic for a few seconds.
  • Add remaining sauce ingredients and simmer for 10 minutes.
  • Combine all meatball ingredients and roll spoonfuls of mixture into balls.
  • Add meatballs to hot sauce and allow to simmer for 15-20 minutes, turning if necessary.
  • Cook pasta according to packet instructions, drain and toss with sauce.
  • Serve with a grating of parmesan and a scattering of parsley leaves.


More good ideas:

  • For a more chunky sauce use canned chopped tomatoes.
  • Use a mixture of beef and pork mince.
