Method
  • Sift dry ingredients together twice
  • Rub in butter until it resembles coarse breadcrumbs
  • Lightly beat egg, water, vanilla and lemon juice together
  • Add to dry mixture and mix with a knife until mixture forms large lumps
  • Lightly knead to form a firm dough
  • Wrap one third of dough in plastic and place in the freezer
  • Cover remaining dough and leave to rest  at room temperature
  • Preheat oven to 180ºC
  • Grease a 23cm x 32cm swiss roll pan
  • Press room temperature dough into lined tray
  • Level dough and work up a small edge all around to prevent jam from leaking into pan
  • Spread a generous layer of jam over base
  • Grate a layer of halffrozen dough over jam using a coarse grater
  • Bake for 20-25 minutes
  • Allow to cool
  • Cut into star shapes of different sizes with cookie cutters, or divide into  small squares
  • Store in an airtight container layered with greaseproof paper
